An exciting opportunity has arisen for an experienced Sous Chef to join a Fine Dining Banqueting & events company in the SW London areas.Ideally from a hotel background you will be responsible for overseeing the kitchen operations for high-end banquet events and fine dining services. The role requires an expert in culinary techniques, leadership, and maintaining exceptional food quality in a fast-paced, luxury environment. The Sous Chef will lead the kitchen team in the preparation, cooking, and presentation of dishes while ensuring a memorable dining experience for guests. This position demands creativity, organisation, and an in-depth knowledge of food safety and hygiene standards.
REQUIREMENTS
- Be able to prepare, portion control, control wastage, follow H&S measures, control GP's & be able to create recipes to company standards
- Must have proven experience in managing banquets, events, and large-scale catering operations
- Understand the importance of time management and working in a fast paced kitchen
- Design and execute high-quality, innovative menus for banquets, events, and fine dining.
- Ensure menus align with hotel's standards, seasonality, and guest preferences.
- At least 3/4 years of experience in a fine dining kitchen in a leadership role
- Manage kitchen schedules, ensuring sufficient staffing levels during events and peak times.
- Ensure the use of fresh, high-quality ingredients and control food waste.
- Used to working in a high volume environment
- High attention to detail in both food preparation and presentation
- Inspect and taste dishes before they are served to guarantee flavor, texture, and presentation
- Oversee inventory management, including the ordering, storage, and use of ingredients and supplies
- Understands the subtle ways that different flavours work
- MUST have experience in a large scale kitchen or production kitchens
- Work closely with the banquet and event management teams to plan and execute large-scale events, weddings, and private dinners
- In-depth knowledge of food safety, hygiene standards, and kitchen operations
- Maintain high standards of guest satisfaction by ensuring exceptional food quality and presentation
